Chocolate Financier:
Ingredients:
- 160g Almond powder
- 240g Icing sugar
- 100g Flour
- 3g Salt
- 220g Egg white (1)
- 200g Embassy Continental Couverture 75%
- 280g Butter
- 80g Egg white (2)
- 50g Brown sugar
- 100g Chopped walnuts
- 40g Dates
- 160g Dried apricots
Chocolate Dacquoise:
Ingredients:
- 135g Egg white
- 100g Sugar
- 135g Almond powder
- 33g Icing sugar
- 16g Cocoa powder
- 2g Salt
Step 1: Prepare Chocolate Financier
- Preheat the oven to 350°F (180°C). Grease and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond powder, icing sugar, flour, and salt.
- In a separate bowl, whisk together the first portion of egg whites (220g) until frothy.
- In a saucepan, melt Embassy Continental Couverture 75% chocolate and butter over low heat. Allow it to cool slightly.
- Add the melted chocolate-butter mixture to the dry ingredients, and then fold in the frothy egg whites until well combined.
- In another bowl, whisk the second portion of egg whites (80g) until soft peaks form. Gradually add brown sugar while continuing to whisk until stiff peaks form.
- Gently fold the whipped egg whites into the chocolate batter.
- Add chopped walnuts, dates, and dried apricots to the batter, folding until evenly distributed.
- Pour the batter onto the prepared baking sheet and spread it evenly.
- Bake for about 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow it to cool completely.
Step 2: Prepare Chocolate Dacquoise
- Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.
- In a bowl, combine almond powder, icing sugar, cocoa powder, and salt.
- In a separate bowl, whisk egg whites until foamy. Gradually add sugar while continuing to whisk until stiff peaks form.
- Gently fold the dry ingredients into the whipped egg whites until just combined.
- Spread the mixture onto the prepared baking sheet and smooth it out with a spatula.
- Bake for about 12-15 minutes or until the dacquoise is set. Allow it to cool completely.
Step 3: Assemble the Firecracker Roll Cake
- Once both the financier and dacquoise are cooled, place the dacquoise on top of the financier.
- Carefully roll the layers together, starting from the shorter end.
- Trim the edges for a neater appearance if desired.
- Optional: Decorate the roll cake with additional melted chocolate, powdered sugar, or edible decorations.
- Chill the roll cake in the refrigerator for at least 1-2 hours before slicing.
