Dubai Chewy Mochi
Dubai Chewy Mochi is a luxurious fusion of Japanese tradition and Middle Eastern indulgence, featuring a rich, chocolate-infused outer skin. Inside, a crunchy toasted kunafa and pistachio layer encases a silky vanilla ganache core for the ultimate play on textures. It’s the perfect bite-sized treat for those who crave the viral "Dubai Chocolate" experience with a soft, chewy twist.

Recipe instruction
Vanilla Ganache (7g/pc)
Ingredients:
● 90g Oceanic Dark Chocolate Couverture 65%
● 56.2g Cream
● 13.7gButter
● 1 Vanilla Pod
● 15g Glucose
Method:
1. Heat cream and vanilla pod until 80°C, then pour into 65% dark chocolate.
2. After cooling, add glucose and room-temperature butter.
3. Put in small dome molds and freeze.
Pistachio Kunafa (15g/pc)
Ingredients:
● 60g Kunafa
● 60g Zen White Chocolate 33%
● 25g Butter
● 75g Pistachio Paste
● 5gSunflower Oil
● 1g Salt
Method:
1. Bake kunafa and toss it into butter until golden crisp.
2. Melt the Zen White Chocolate, then mix with pistachio paste, sunflower oil, and salt.
3. Pour the pistachio mixture into the crispy kunafa.
4. Put in dome molds and freeze.
Choco Mochi Skin (20 g/pc)
● 98 g Mochi Premix
● 40g Water
● 1g Oil
● 2g Cocoa Powder
Method:
1. Mix the mochi premix and water until combined.
2. Add oil and cocoa powder and mix again until well incorporated.
3. Mix until the mixture sticks together and forms a mochi dough.
Assembly
1. Once the vanilla ganache is frozen, cover it with the pistachio kunafa and shape it into a ball.
2. Cover the ball with the mochi skin.
3. Dust the mochi ball using a mix of cornstarch and cocoa powder.
