Banana Tunnel Cake

Banana Chiffon

175 gram Banana Puree
80  gram Egg Yolk
15 gram Castor Sugar
40 gram Butter
70 gram Cake Flour
140 gram Egg Whites
60 gram Castor Sugar

  • Whisk together banana puree, egg yolks and sugar
  • Melt the butter and mix with flour
  • Combine the two mixtures together
  • Whip the egg whites and sugar until soft peaks
  • Fold into the banana mixture in 3 additions, pour into an ungreased tunnel mould
  • Bake in a preheated oven at 160o C for 50 – 60 minutes

300 gram Cream
400 gram Embassy Oceanic Blend 65% Dark Chocolate



250 gram Embassy Equatorial Blend 56% Dark Chocolate
